Ingredients:
- 2 cups cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water flax egg
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 can 14 oz coconut milk
- 2 tablespoons curry powder
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
- Juice of 1/2 lime
- Fresh cilantro for garnish
Instructions:
Mash the cooked lentils in a big bowl until they are mostly smooth
Put in the garlic, onion, flax egg, cumin, coriander, turmeric, smoked paprika, salt, and pepper
Mix everything together well
Shape the mixture into meatballs that are about an inch across
Warm up a big pan with olive oil over medium-low heat
It will take about 8 to 10 minutes of cooking after adding the lentil meatballs until they are browned on all sides
Put the coconut milk, curry powder, maple syrup, and soy sauce in a different saucepan
Over medium heat, bring to a simmer and stir every now and then
After the sauce has gotten a little thicker, add the lime juice and mix it in
Add fresh cilantro to the top of the lentil meatballs and serve them with the curry sauce
