Grilled Vegetable Quesadillas Burger



Grilled vegetables and gooey cheese stuffed between two tortillas make this burger tasty and filling. It has just the right amount of Mexican flavors and burger indulgence.

Ingredients:

  • 2 large tortillas
  • 1 cup of shredded cheese your choice
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 red onion, thinly sliced
  • 1/2 cup of corn kernels fresh or frozen
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of paprika
  • 1/4 cup of fresh cilantro, chopped
  • Sour cream and salsa for serving

Instructions:

Preheat your grill to medium-high heat

In a large bowl, toss the sliced bell peppers, zucchini, red onion, and corn with olive oil, salt, pepper, chili powder, cumin powder, and paprika

Place the seasoned vegetables on the grill and cook for 4-5 minutes per side or until they are tender and have grill marks

Remove the grilled vegetables from the grill and set them aside

Place one tortilla on a clean surface and sprinkle half of the shredded cheese evenly over it

Arrange the grilled vegetables on top of the cheese, then sprinkle with chopped cilantro

Place the second tortilla on top to create a quesadilla sandwich

Carefully transfer the quesadilla to the grill and cook for 2-3 minutes on each side, or until the tortillas are crispy and the cheese is melted

Remove the quesadilla burger from the grill and let it cool slightly before slicing into wedges

Serve with sour cream and salsa as dipping sauces
