Quinoa Closet Bliss



With this tasty quinoa salad, you can turn your hall closet into a place where you can get things in order and get ideas. The bright colors and flavors will not only make your taste buds happy, but they will also make your closet look better.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions:

Rinse quinoa thoroughly under cold water

In a saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

In a skillet, heat olive oil over medium heat

Add diced bell peppers and red onion

Saute until vegetables are tender, about 5 minutes

Fluff cooked quinoa with a fork and transfer to a large bowl

Add sauteed vegetables, chopped parsley, and crumbled feta cheese

Mix well

Season with salt and pepper to taste

Toss the mixture until evenly combined

Serve the quinoa salad in organized compartments within your hall closet for a visually pleasing and accessible storage solution

Taco Cobb Salad



A delicious and satisfying Taco Cobb Salad with a zesty dressing that combines the flavors of tacos with the classic Cobb salad ingredients. Perfect for a quick and healthy meal.

Ingredients:

  • 2 cups of chopped lettuce
  • 1 cup of diced cooked chicken
  • 1/2 cup of diced tomatoes
  • 1/2 cup of diced avocado
  • 1/4 cup of diced red onion
  • 1/4 cup of shredded cheddar cheese
  • 1/4 cup of black beans
  • 1/4 cup of corn kernels
  • 1/4 cup of crushed tortilla chips
  • 1/4 cup of sour cream
  • 2 tablespoons of salsa
  • 1 tablespoon of taco seasoning
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the chopped lettuce, diced chicken, diced tomatoes, diced avocado, diced red onion, shredded cheddar cheese, black beans, and corn kernels

In a separate small bowl, mix together the sour cream, salsa, taco seasoning, lime juice, salt, and pepper to make the dressing

Drizzle the dressing over the salad and toss everything together until well coated

Sprinkle the crushed tortilla chips on top as a garnish

Serve immediately and enjoy your Taco Cobb Salad!
