Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup eggnog
- 1/4 cup spiced rum
- 1 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with paper liners
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and ground nutmeg
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next
Stir in the eggnog, spiced rum, and vanilla extract until the mixture is well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Be careful not to overmix
Divide the cupcake batter evenly among the prepared cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely
While the cupcakes are cooling, prepare the spiced rum buttercream frosting
Once the cupcakes are completely cool, frost them with the spiced rum buttercream
Decorate as desired and enjoy!
