Keto Cauliflower Crust Pizza



A tasty, low-carb alternative to regular pizza crust that is made from cauliflower. It doesn't have gluten and is great for people on the keto diet.

Ingredients:

  • 1 medium head cauliflower, grated
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

Preheat the oven to 425F 220C

Place the grated cauliflower in a microwave-safe bowl and microwave for 5 minutes

Let the cauliflower cool, then squeeze out excess moisture using a clean kitchen towel or cheesecloth

In a mixing bowl, combine the cauliflower, eggs, mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper

Mix well

Line a baking sheet with parchment paper and spread the cauliflower mixture into a circle, about 1/4 inch thick

Bake the cauliflower crust for 15-20 minutes, until golden brown and firm

Remove the crust from the oven and add your desired pizza toppings

Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly

Slice and serve hot
